Ingredients:
2 cod fillets
500 g of small sliced potatoes
2 tablespoons of olive oil
2 cloves of minced garlic
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
Salt and pepper to taste
1/2 cup of cream (optional to give a special touch)
1 lemon (for the juice and garnish)
Fresh rosemary (optional to garnish)
Instructions:
1. Preheat the oven to 200 °C.
2. On a baking sheet, spread the sliced potatoes. Drizzle with olive oil, garlic, thyme, rosemary, salt and pepper. Mix well.
3. Place the cod fillets on the potatoes. Season the fish with a little more herbs, salt and pepper. 4. (Optional) Drizzle the cream over the potatoes for a more intense flavor.
5. Bake uncovered for 25 to 30 minutes, until the fish flakes easily and the potatoes are tender.
6. Squeeze fresh lemon juice over the top before serving and garnish with rosemary sprigs.
