Trinidad Pepper Shrimps
Ingredients Serving -6 person 2 lbs shrimp peeled and deveined 3 tablespoon olive oil or canola oil 1 teaspoon seasoned salt I used creole seasoning ½ onion diced 2 large jalapeños peppers diced ,seeds removed. 2 teaspoons minced garlic or 1 tablespoon garlic powder 4 teaspoon curry Powder 2 teaspoon paprika 2 sprig thyme 2 teaspoon cayenne pepper adjust to suit taste buds 2 Tablespoon tomato paste or more ½ cup coconut milk 1/4 oz chopped parsley ½ teaspoon white pepper optional Salt to taste Instructions Season the shrimp with creole spice. Heat about 3 tablespoons of oil over medium heat in a heavy bottomed Dutch. Sauté for about 3 -5 minutes shrimp set aside. Add jalapenos, thyme, and garlic. Stir for about a minute, followed by curry powder, onions, paprika, white pepper ,coconut milk. Bring it to a boil then simmer for about 7-10 minutes. Toss in shrimp, Add for salt & pepper. Add chopped parsley. Serve over rice and or vegetables.
