Strawberry Red Velvet Cheesecake

Grease a 9-inch springform pan. For the crust: Mix graham cracker crumbs and melted butter. Press into the bottom of the pan. Bake for 10 minutes, then cool. For the cheesecake: Beat cream cheese until smooth. Add sugar, sour cream, and vanilla extract. Mix in eggs one at a time. Add strawberry puree and red food colouring, blend well. Pour the cheesecake mixture over the crust, spreading evenly. Bake for 60-70 minutes until set. Let it cool in the oven with the door cracked for 1 hour. Chill the cheesecake for at least 4 hours. Top with whipped cream, fresh strawberries, and red velvet cake crumbs before serving
