Jamaican Stewed King Fish
Ingredients: 2 lbs of King Fish 1 lemon, lime or 1/4 cup vinegar 1 tsp salt 2 tsp butter 1 large onion 3 stalks scallion 1 scotch bonnet pepper 1 bell pepper 2 cloves garlic 3 large tomatoes 2 ozs Vegetable oil 3 tbsp flour3 sprigs fresh thyme 1 tbsp browning sauce 2 tbsp ketchup 2 cups fish stock or water Directions: wash the fish with the lemon juice or cider to remove fishy smell.season the fish with salt and pepper. Let the fish marinate for about 1/2 hour Chop up the scallion, scotch bonnet or bell pepper, garlic and tomatoes in to small cubes and set it aside.Heat a pan of oil on the stove. Fry fish slices on both sides until it is golden brown Set them aside .Melt the butter on low heat in the saucepan. then add your scotch bonnet pepper, onions, scallion, tomatoes, thyme, garlic and bell pepper Saute the vegetables until they are soft.Slowly add stock or water to the mixture. Add the browning sauce and ketchup sauce . Add the pieces of fish to the mixture, cover the fish and let it steam for 3 to 5 minutes. Test for taste Serve with Rice and Peas, white Rice or Dumplings, choices are endless.
