Prepare the Fries: Place the cut potatoes in a bowl, drizzle with vegetable oil, and season with salt. Toss to coat. Spread the potatoes on a baking sheet and bake for 25-30 minutes, turning halfway, until golden and crispy. Caramelize the Onions: In a skillet, heat olive oil and butter over medium heat. Add the sliced onions, sprinkle with sugar, and cook, stirring occasionally, for 20-25 minutes until caramelized. Add balsamic vinegar to the onions, stir, and cook for an additional 2 minutes. Remove from heat and set aside. Cook the Steaks: Season the ribeye steaks with salt and pepper. Heat a separate skillet over high heat. Sear the steaks for 3-4 minutes on each side for medium-rare, or to your desired doneness. Let the steaks rest for 5 minutes before slicing. Serve: Serve the steaks topped with caramelized onions and a side of crispy French fries. Garnish with chopped parsley.
