Ingredients:
8 lamb chops
1/4 cup olive oil
3 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh oregano, chopped
Salt and pepper to taste
Juice of 1 lemon
Directions:
In a small bowl, combine olive oil, garlic, rosemary, thyme, oregano, salt, pepper, and lemon juice.
Place lamb chops in a large resealable bag. Pour the marinade over the chops, ensuring each piece is well-coated.
Seal the bag and marinate in the refrigerator for at least 2 hours, or overnight for best flavor.
Preheat grill to medium-high heat. Remove lamb chops from marinade and grill for 4-5 minutes on each side for medium-rare, or until desired doneness.
Let rest for a few minutes before serving.
