Ingredients
2 cups dried black-eyed peas (rinsed)
1 onion, chopped
2 garlic cloves, minced
1 smoked ham hock (or 1 cup diced ham)
1 bay leaf
4 cups vegetable broth (or chicken broth)
1 tsp smoked paprika
1/2 tsp cumin
Salt and pepper to taste
Optional: 1/2 tsp red pepper flakes (for a little kick!)
Instructions
Toss the rinsed black-eyed peas into your slow cooker.
Add the chopped onion, minced garlic, and ham hock (or diced ham).
Sprinkle in the paprika, cumin, and bay leaf, then season with salt and pepper.
Pour in the broth, making sure everything is well covered.
Stir, then cover and cook on low for 6-8 hours, or until peas are tender and flavourful.
Discard the bay leaf and ham hock. If using a ham hock, shred the meat and stir it back into the peas for extra flavour!
