Ingredients:
4 boneless, skinless chicken breasts
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornmeal
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper (optional)
Cooking spray
Directions:
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place chicken breasts in a large zip-top bag and pour buttermilk over them. Seal the bag and refrigerate for at least 1 hour (or overnight for best results).
In a shallow dish, combine flour, cornmeal, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
Remove chicken breasts from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing gently to adhere.
Place coated chicken breasts on the prepared baking sheet. Lightly spray the tops with cooking spray.
Bake for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature of 165°F or 74°C).
Let chicken rest for 5 minutes before serving.
