Ingredients:
- 4 lamb chops
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 pound lobster meat, cooked and chopped
- 4 large potatoes, peeled and cubed
- 1/2 cup cream
- 2 tablespoons unsalted butter
- 1 bunch asparagus, trimmed
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
Directions:
1. Season lamb chops with salt and pepper. Heat olive oil in a pan over medium-high heat and sear lamb chops for 3-4 minutes on each side or until desired doneness. Set aside.
2. Boil potatoes until tender, about 15 minutes. Drain and mash with cream, butter, salt, and pepper. Fold in the chopped lobster meat.
3. Blanch asparagus in boiling water for 2-3 minutes, then plunge into ice water to stop the cooking process. Drain.
4. In the same pan used for lamb chops, sauté garlic and thyme until fragrant. Add asparagus and sauté for an additional 2 minutes.
5. To serve, spread a generous amount of lobster mash on a plate, top with a lamb chop, and side with sautéed asparagus.
