Fried Deviled Eggs

Ingredients:

6 large eggs, hard-boiled

1½ cup mayonnaise

1 teaspoon Dijon mustard

1 teaspoon apple cider vinegar

Salt and pepper to taste

1½ teaspoon paprika (for garnish)

1½ cup all-purpose flour

2 large eggs, beaten

1 cup panko bread crumbs

Oil for frying (vegetable or canola)


Instructions:

Cut the hard-boiled eggs in half and carefully remove the yolks. Set the whites aside.

In a medium bowl, mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper. Mix until smooth. Spoon or pipe the yolk mixture back into the egg whites.

Prepare three bowls for breading: one with flour, one with beaten eggs, and one with panko bread crumbs.

Dip each deviled egg half in the flour, then the beaten eggs, and finally coat in panko crumbs.

Heat oil in a frying pan to 350°F (175°C).

Fry the deviled eggs for 2-3 minutes per side, or until golden and crispy.

Remove and drain on a paper towel.

Sprinkle with paprika and serve immediately.
