Ingredients:
2 very Ripe Plantains, Peeled , halved lengthwise then cut into 2 inch pieces
1 egg wisked
2 0zs Vegetable Oil
3 ozs Cornflakes finely crushed in blender
Method
In a hot frying pan with 2 ozs oil
Fry 2 inch piece of plantain in brown lightlt for 1 minute on both sides ( Do not cook)
Place on a platter remove excess iol with paper napkin
In the bowl with the wisked egg coat all the plantain pieces
in a seperate bowl add the crushed corn flake and saturate as if flouring chicken pieces
Place on baking tray with grease proof paper and bake in 350 degrees oven for 10 minutes
turn over at least twice for even golden brown coloring
This is an added side dish to most meals. Enjoy
