Ingredients:
1 pound of uncooked conch
1 medium diced onion
about 1 cup of diced celery
3 medium chopped tomatoes
1 chopped green bell pepper
1 chopped red bell pepper
1 minced Scotch bonnet
1 minced habanero pepper
1/3 cup fresh orange juice
juice of 2 fresh limes
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
Preparation:
Put conch between 2 sheets of heavy duty plastic wrap
Beat conch into submission (till it’s about 1/4 to 1/2 in thick)
Dice conch into small 1/4 inch pieces
Add the rest of the ingredients and mix well
Cover and place in fridge for at lest three hours. Overnight is wonderful
Serve chilled
Serve with: Stiff drink or beer of choice
