Ingredients:
2 cups mashed potatoes
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 large eggs, lightly beaten
2 green onions, finely chopped
1/4 cup all-purpose flour
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup breadcrumbs
Vegetable oil, for frying
Instructions:
1. Prepare the Mashed Potatoes:
In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, lightly beaten eggs, finely chopped green onions, all-purpose flour, garlic powder, salt, and black pepper.
Mix until well combined.
2. Form the Puffs:
Using your hands or a spoon, form the potato mixture into small balls (about 1-2 inches in diameter).
Roll each ball in breadcrumbs to coat evenly.
3. Heat the Oil:
In a large skillet, heat vegetable oil over medium-high heat.
4. Fry the Puffs:
Carefully add the potato puffs to the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
Remove from the oil and drain on paper towels.
5. Serve:
Serve the Cheesy Mashed Potato Puffs warm, with a side of sour cream or your favorite dipping sauce.
